This morning, I took a few minutes to cook myself breakfast for a change, instead of just grabbing something quick. Part of the motivation was to not let the mushrooms in the refrigerator go bad.
I cut up some apples and put them in the new air fryer Laurie bought me for Christmas. My new favorite morning food is cooked green apples and cinnamon. Hmm.
I opened up some fresh tofu, took the mushrooms, two eggs and threw them into a pan. I’m not big on eggs because they can cause headaches according to a neurologist I visited years ago. I am prone to headaches. While I don’t completely avoid all of the foods on the list because that would mean I would have to avoid nearly everything, I do try to keep it in moderation especially when I know it is Monday and I’m going to have to use my brain for the rest of the day.
I’m going to see if I can find some fresh cinnamon. I’m not sure if there is such a thing but I’ll find out.
I’ve grow to like tofu quite a bit because it is a good filler without the guilt.
Today, I’m going to try to drink that entire gallon of water you see next to my plate to see if it improves my mood at all. The tea I drink first thing in the morning may dehydrate me a bit.
I’m considering stopping the team and moving to a lemon water option, and possibly eating one orange and one apple every morning. Gotta keep it light.
